This is one of my favorite super-fast go to meals. The recipe I use is adapted from here. It's also quite healthy, which is an added bonus. The aromatic sweet and spicy flavor of the jerk seasoned chicken balances so well with the creamy mashed sweet potatoes. The black beans and tomatoes make this quite a hearty meal without being heavy.
To make this snappy dish, you'll need:
- 2 large sweet potatoes
- 4 chicken breasts
- 1 1/2 T extra virgin olive oil
- 1 yellow or white onion, chopped
- 2-3 teaspoons Caribbean jerk seasoning
- 1 cup chopped tomato
- 1 can black beans, rinsed and drained
- 1 T butter
- 1 can chicken broth
- Salt and pepper for seasoning
- Cube chicken once cooked, add 1/4 cup of white wine (or additional broth) before final simmer and serve this stew-like dish over rice
Time to get started:
Scrub sweet potatoes and prick several times with a fork. Set potatoes in a microwave safe dish filled with a splash of water to just cover the bottom of the dish. Cook in microwave for seven to eight minutes, until very tender. Rotate the potatoes in the water every minute or two. Let cool.
As these are cooking, season chicken breasts with jerk rub. In a large skillet, heat 1T of olive oil and add seasoned chicken when pan is hot. Cook 10-12 minutes on medium heat, until brown on each side.
Once the chicken is "on," in another small skillet, heat remaining olive oil and add chopped onions. Cook these on medium low until soft and translucent, for about 15 minutes.
As the chicken and onions are cooking, scoop insides of sweet potatoes with spoon, and mash. Add butter and salt and pepper to taste. Microwave for another minute or two to cook through.
When chicken is browned, add tomatoes, beans, onions, broth and another teaspoon or two of jerk seasoning depending on spice preference. Bring to boil, reduce heat and simmer for 5 minutes or until chicken is fully cooked.
